300 g of radicchio
120 g of speck
walnuts to taste
4 spring onions
extra virgin olive oil to taste
Wash and prepare the radicchio, cutting it into strips of no more than 2 cm. Finely slice the spring onions and sweat in a non-stick frying pan with some extra virgin olive oil. Cut the speck into thin strips, add it to the spring onions and then add the radicchio. Cook over a medium heat for about 15 minutes, until the radicchio is fully cooked. Finish with a sprinkle of walnuts.
